My favorite food is curanto. The curanto is not a generic type of food. The curanto is a typical food from the south of Chile, specifically from Chiloe. Although similar foods are made in other parts of the world, the Chilote curanto is unique. It is very popular in the south of Chile because it is a festive meal and it is really very tasty. Generally the curanto is composed of a mixture of seafood, smoked fish, smoked pork, sausages, chicken, potatoes, chapaleles and some add milcaos.El curanto is cooked in two ways. One way is to do it to the pot, which is also called pulmay, where it is cooked in a broth with white wine that is really wonderful. Another way, the most traditional, is to do it in a hole where steam is cooked with hot stones. I suggest the curanto to the pot since the broth is a mixture of all the flavors and it also has white wine, water, condiments, onion and other chopped vegetables if you wish. The curanto should also be accompanied by pebre, I like the preparation with cilantro, onion, tomato, green pepper, olive oil, lemon and salt. I recommend the pebre with the chapalele, the mixture is incredibly tasty.
